Spaghetti is most liked by children and even adults. It is one of the recipes served in the feeding program at Cabaluay Elementary School, Mercedes District, this city. Spaghetti Surprise is one of the items in the menu prepared by the students of the Department of Nutrition and Diatetics from Western Mindanao State University (WMSU).

It is called Spaghetti Surprise because it is not the usual pasta used but what makes the difference is the pumpkin or red squash that is mixed with the pasta. Pumpkin is rich in Vitamin A, readily available and affordable.

School feeding program in-charge Mrs Evelyn E. Medrano attested that 47.22% of the severely wasted pupils increase their weight to normal.

Here is how to prepare “Spaghetti Surprise”:

These are the following ingredients; pasta spaghetti (500ml), tomato (500g), garlic (25g), chopped onion (lOOg), chicken cubes 2 pcs (20g), roasted peanuts (lOOg) minced, oil (100ml), chicken breast (250g), sweet potato (500g) grated, puree squash (500g), banana catsup, bell pepper red (50g), 1can condensed milk, cheddar cheese (50g), salt and pepper to taste.

For squash and sweet potato puree, boil the red squash and sweet potato until tender and tenderized or mashed with 1 cup of chicken broth, then add tomato puree blend or minced. For chicken preparation, boil the chicken preparation, boil the chicken in 4 cups of water season with iodized salt and pepper. Cook until tender. Drain the stock, chicken breast deboned and flakes then set aside. Cook pasta spaghetti as per package instruction. In cooking of the sauce, sauté onions, garlic and chicken and 1 chicken cube. Add the tomato puree, red squash and sweet potato puree. Add all ingredients, simmer to cook, add chicken stock if necessary then add chicken cubes and salt pepper to taste. — Mayvelyn C.
